Ingredients

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons ground ginger
1 teaspoon ground cinnamon

1/4 teaspoon salt
3/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/3 cup molasses
1 large egg
1/3 cup granulated sugar (for rolling)


Instructions

In a medium bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
In a large bowl, beat the softened butter, 1/2 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy.
Beat in the egg and molasses until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until just incorporated.
Cover and refrigerate the dough for at least 2 hours to ensure the best texture.
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Roll the dough into 1-inch balls and roll each ball in the remaining granulated sugar.
Place balls 2 inches apart on the prepared baking sheet.
