Ingredients

2 3/4 cups high-quality 1:1 gluten-free baking flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 tablespoons granulated sugar (for coating)
3 teaspoons ground cinnamon (for coating)


Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the gluten-free flour, cream of tartar, baking soda, and salt.
In a separate large bowl, cream the softened butter and 1 1/2 cups of granulated sugar until fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet ingredients and mix until smooth.
Chill the dough for at least 30 minutes to ensure a chewy texture.
In a small bowl, combine the 3 tablespoons of sugar and cinnamon for the coating.
Roll the dough into 1-inch balls and toss them in the cinnamon-sugar mixture until well coated.
Place on the baking sheet and bake for 10-12 minutes until edges are set but the centers remain soft.
Remove from oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Ensure your gluten-free flour blend contains xanthan gum for best structure. If it does not, add 1 teaspoon of xanthan gum to the dry ingredients. Store cookies in an airtight container for up to 5 days or freeze the dough balls for up to 3 months.
