100 g (7 tbsp) unsalted butter
2 large eggs
50 g (¼ cup) Demerara sugar
50 g (¼ cup) granulated sugar
2 tbsp cocoa powder
½ tsp baking powder
¼ tsp salt
Instructions
Preheat oven to 175°C (350°F)
Line a 12×15-inch baking sheet with parchment paper
In a heatproof bowl, melt chocolate and butter in microwave or over double boiler
Whisk eggs, Demerara sugar, granulated sugar, and cocoa powder until airy and pale
Gradually add melted chocolate mixture, mixing gently
Fold in flour, baking powder, and salt until just combined
Drop tablespoonfuls of batter onto prepared sheet, spacing 2 inches apart
Bake for 14 minutes or until edges are slightly crisp but centers still shake slightly
