Description
A refreshing Mexican-American salad blending charred corn, crisp cucumbers, and a zesty chili-lime dressing. The balanced textures and flavors make it perfect for summer gatherings.
Ingredients
2 cups fresh corn kernels
1 medium English cucumber
1 cup cherry tomatoes
1/2 medium red onion
1 cup feta cheese
1/4 cup fresh cilantro
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup lime juice
1 teaspoon chili powder
1/4 cup chopped chilies (e.g., jalapeño or serrano)
Salt and pepper to taste
Instructions
Preheat grill or stovetop to medium-high heat.
Grill corn kernels until slightly charred.
Dice cucumber into bite-sized pieces; halve cherry tomatoes.
Finely dice red onion and mix with lemon juice to prevent browning.
In a bowl, whisk mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until emulsified.
Add grilled corn, cucumber, cherry tomatoes, and red onion to the dressing; toss to combine.
Stir in feta cheese and cilantro. Let sit for 5 minutes to meld flavors.
Notes
Use canned corn as a substitute if fresh is unavailable.
Replace feta with Cotija, goat cheese, or vegan alternative.
For a vegan option, use plant-based mayonnaise and skip feta.
Adjust chili powder and chilies to control heat level.
Chill before serving for peak crispness.
