Description

A vibrant American-fusion dish with a perfect balance of citrus acidity, honey sweetness, and Sriracha heat. Tender chicken thighs marinated in a lime-soy glaze, grilled to perfection with a caramelized finish.


Ingredients

lbs boneless, skinless chicken thighs, cut into -inch cubes
¼ cup fresh lime juice
3 tbsp low-sodium soy sauce
1 tbsp reduced-sodium Sriracha
2 tbsp honey
1 tsp cornstarch
1 tbsp olive oil
1 tbsp grated fresh ginger
2 cloves garlic, minced
Skewers (metal or soaked wooden)


Instructions

Combine lime juice, soy sauce, Sriracha, honey, ginger, garlic, and olive oil in a bowl
Add chicken cubes and marinate for 30-40 minutes
In a small bowl, mix cornstarch with 1 tbsp of the marinade until smooth
Thread chicken onto skewers, leaving ½-inch space between pieces
Preheat grill to medium-high (400°F/200°C)
Grill skewers 4-5 minutes per side, basting with the starchy marinade during last 2 minutes to create a caramelized glaze
Allow to rest 5 minutes before serving

Notes

Adjust Sriracha to taste
For extra moisture, add 1 tbsp olive oil to the glaze
Use disposable aluminum foil trays for easy cleanup on the grill
Metal skewers cook faster – pre-soak if using wooden skewers
