Description

A vibrant, high-protein skillet meal that pairs savory, chili-spiced ground beef with a colorful array of garlic-sautéed vegetables. This Asian-inspired dish uses quick-cooking techniques to preserve the crisp texture of broccoli and earthy mushrooms, making it an ideal choice for busy weeknights or efficient meal prep. Served over your choice of grains, it offers a perfectly balanced, flavorful, and budget-friendly dinner that hits the table in under thirty minutes.

Ingredients

1 lb lean ground beef
2 cups broccoli florets
8 oz cremini mushrooms, sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons sesame oil
1 tablespoon chili flakes
3 tablespoons soy sauce (low sodium)
1 tablespoon honey
4 cups cooked brown rice or quinoa
Green onions for garnish
Sesame seeds for garnish

Instructions

Heat one tablespoon of sesame oil in a large skillet over medium-high heat.
Add ground beef and cook until browned, breaking it apart with a spatula; drain excess fat.
Stir in half of the minced garlic, ginger, and chili flakes, cooking for another minute until fragrant.
Remove the beef from the skillet and set aside.
In the same skillet, add the remaining oil, broccoli, and mushrooms; sauté until tender-crisp.
Add the remaining garlic and cook for 30 seconds.
Return the beef to the pan and stir in the soy sauce and honey.
Toss everything together for 1-2 minutes until heated through.
Serve over cooked grains and garnish with green onions and sesame seeds.

Notes

Store leftovers in airtight containers for up to 3 days in the refrigerator. For a meal-prep friendly version, store the sauce separately if packing lunch containers to keep vegetables crisp. Substitute the beef with ground turkey for a leaner alternative.
