Ingredients
Ground Beef (1 lb)
Potatoes (4 medium, diced 1/2-inch)
Olive Oil (1 tbsp)
Small Onion (1, finely diced)
Garlic Cloves (2, minced)
Ketchup (1/2 cup)
Tomato Paste (2 tbsp)
Worcestershire Sauce (1 tbsp)
Brown Sugar (1 tbsp)
Beef Broth (1/2 cup)
Sharp Cheddar Cheese (1 cup, shredded)
Salt and Pepper to taste
Bell Pepper (1, finely chopped)
Instructions
Preheat oven to 400°F (200°C)
Pat dry ground beef on paper towels and set aside
Dice potatoes into 1/2-inch cubes
Heat olive oil in a skillet, sauté onion and garlic until fragrant
Brown beef until cooked through (medium-rare)
Add bell pepper and sauté 2 minutes
Mix in ketchup, tomato paste, Worcestershire, brown sugar, and beef broth
Simmer 5 minutes, then season
Add sautéed potato cubes and simmer 10 minutes
Sprinkle cheddar cheese and transfer to oven
Bake 10 minutes until potatoes are golden and cheese is melted
Garnish with fresh chives if desired
Notes
Use 85/15 lean beef or substitute with ground turkey
Substitute olive oil with avocado oil
For halal version, verify Worcestershire sauce is alcohol-free
Par-cooked potatoes retain shape
Store in airtight container for 3 days
