Ingredients
12 oz penne pasta
2 fresh salmon fillets, skinned and cubed
2 tablespoons olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
1/2 cup grated parmesan cheese
1 large lemon, zested and juiced
1/4 cup fresh parsley, chopped
Reserved pasta water as needed
Instructions
Bring a large pot of salted water to a boil and cook the penne until al dente.
Before draining, reserve 1 cup of the starchy pasta water.
In a large skillet, heat the olive oil over medium-high heat and sear the salmon cubes until golden and cooked through; remove and set aside.
In the same skillet, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
Add 1/2 cup of the reserved pasta water to the skillet and bring to a simmer.
Add the cooked pasta and grated parmesan to the skillet, tossing vigorously to create a silky sauce, adding more pasta water if too dry.
Stir in the salmon, lemon juice, and zest; toss until well combined.
Serve immediately garnished with chopped parsley.
Notes
Ensure you reserve enough pasta water for the emulsion to keep the sauce glossy. Add the parmesan gradually while tossing to prevent clumping. You can add red pepper flakes for a subtle heat if desired.
