Description

A robust and comforting weeknight meal that brings bold Cajun flavors to your table in a single skillet. This dish features lean ground beef, tender long-grain rice, and an aromatic blend of spices, all finished with gooey melted cheese and a tangy Cajun mayo. It is a perfect solution for busy families needing a high-protein dinner that simplifies cleanup without sacrificing depth or satisfaction.

Ingredients

1 lb lean ground beef
1 cup long-grain white rice
2 cups beef broth (alcohol-free)
1 small yellow onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 tbsp Cajun seasoning
1/2 tsp smoked paprika
1 cup shredded Colby cheese
2 tbsp mayonnaise mixed with a pinch of Cajun spice for drizzle
1 tbsp olive oil

Instructions

Heat olive oil in a large skillet or deep pan over medium-high heat.
Add the ground beef and cook until browned, breaking it up with a spoon.
Add the diced onion and bell pepper to the skillet and sauté until softened.
Stir in the garlic and Cajun seasoning, cooking for about 1 minute until fragrant.
Add the rice to the skillet and stir for 1-2 minutes to toast slightly.
Pour in the beef broth and bring the mixture to a gentle boil.
Reduce the heat to low, cover the skillet tightly, and simmer for 20 minutes.
Remove from heat and stir in the shredded cheese until melted and bubbly.
Drizzle with the prepared Cajun mayo before serving.

Notes

Ensure the rice is fully covered by the broth to steam evenly. You can substitute ground turkey for a leaner option. Store leftovers in an airtight container for up to 3 days.
