Ingredients
1.5 lbs boneless skinless chicken thighs, cut into bite-sized pieces
2 fresh peaches, diced
2 jalapeno peppers, seeded and minced
3 tablespoons soy sauce (or coconut aminos for soy-free)
2 tablespoons apple cider vinegar
1 tablespoon honey
2 tablespoons olive oil
1/2 teaspoon garlic powder
Salt and black pepper to taste
Fresh cilantro for garnish
Instructions
Season the chicken thigh pieces with salt, pepper, and garlic powder.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sear until golden brown and cooked through, about 8-10 minutes.
Remove chicken from the skillet and set aside.
In the same skillet, add the diced peaches and minced jalapenos, cooking until the peaches begin to soften and release their juices.
Stir in the soy sauce, apple cider vinegar, and honey, allowing the mixture to simmer and thicken into a glossy glaze.
Return the cooked chicken to the pan and toss thoroughly to coat in the peach-jalapeno glaze.
Cook for an additional 2-3 minutes until heated through and well-glazed.
Garnish with fresh cilantro before serving.
Notes
Adjust the heat by adding more or fewer jalapenos depending on your spice preference. If peaches are not in season, high-quality frozen or canned peaches (in juice) can be used as a substitute. Store leftovers in an airtight container for up to 3 days.
