Ingredients
1 lb ground beef
2 cups cooked white rice
1 large sweet potato, peeled and cubed
3 tablespoons honey
1 tablespoon chili flakes
3 cloves garlic, minced
1 teaspoon smoked paprika
2 tablespoons olive oil
2 large eggs
Fresh cilantro, chopped for garnish
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C) and roast the cubed sweet potatoes with olive oil, salt, and pepper for 20 minutes until tender.
In a large skillet over medium-high heat, brown the ground beef until cooked through.
Drain excess fat and add minced garlic and smoked paprika, stirring for 1 minute until fragrant.
In a small bowl, whisk together the honey and chili flakes.
Pour the honey mixture over the beef and stir until the meat is evenly glazed and glossy.
In a separate small pan, fry the eggs to your preference, keeping the yolks runny.
Assemble the bowls by layering the rice, roasted sweet potatoes, and glazed beef.
Top each bowl with a fried egg and garnish with fresh cilantro.
Notes
Ensure the honey is added only at the end to prevent burning and preserve the floral notes. You can adjust the spice level by increasing or decreasing the chili flakes. Store leftovers in an airtight container for up to 3 days.
