Ingredients

1.5 lbs boneless skinless chicken breasts, cut into chunks
2 cups fresh pineapple, cubed
2 large bell peppers, chopped
1 large red onion, wedged
3 tbsp olive oil
1/4 cup soy sauce (or coconut aminos)
2 tbsp honey
2 cloves garlic, minced
1 tsp ground ginger
1/2 tsp black pepper
Green onions for garnish


Instructions

Preheat your oven to 400°F (200°C).
In a small bowl, whisk together olive oil, soy sauce, honey, minced garlic, ginger, and black pepper.
Place the chicken, pineapple, bell peppers, and red onion on a large sheet pan.
