Description

This comforting one-pot meal captures the deep, savory essence of classic French onion soup in a hearty, baked casserole format. By combining perfectly caramelized onions, tender shredded rotisserie chicken, and al dente orzo pasta, this dish offers a rich and satisfying dining experience. Topped with a golden, melted layer of mozzarella and parmesan, it is an ideal, family-friendly weeknight dinner that relies on simple pantry staples for a restaurant-quality finish that is sure to please everyone at the table.

Ingredients

3 tablespoons unsalted butter
3 large yellow onions, thinly sliced
2 cloves garlic, minced
1.5 cups uncooked orzo pasta
3 cups low-sodium chicken broth
2 cups shredded rotisserie chicken
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1.5 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley for garnish

Instructions

Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, melt the butter over medium heat.
Add the sliced onions and cook, stirring occasionally, for 15-20 minutes until they are deeply caramelized and golden brown.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the orzo pasta to the skillet and stir to coat it in the onion-butter mixture.
Pour in the chicken broth, then stir in the shredded chicken, thyme, salt, and pepper.
Bring the mixture to a simmer, then remove from heat.
Sprinkle the mozzarella and Parmesan cheese evenly over the top of the orzo mixture.
Transfer the skillet to the oven and bake for 15-20 minutes, or until the liquid is absorbed and the cheese is bubbly and lightly browned.
Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

To ensure the best flavor, do not rush the onion caramelization process; this is where the depth of the dish comes from. If you prefer a crunchier topping, you can add a handful of panko breadcrumbs mixed with a little butter before baking. Store leftovers in an airtight container in the refrigerator for up to 3 days; the flavors often intensify the next day.
