Ingredients

1 lb lean ground beef
1 cup white rice, uncooked
2 cups beef or vegetable broth
1/2 cup yellow onion, diced
2 cloves garlic, minced
2 cups sharp cheddar cheese, shredded
1 cup sour cream
1 tsp salt
1/2 tsp black pepper
1 tsp dried oregano


Instructions

Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground beef with the diced onion and minced garlic over medium-high heat until the meat is fully cooked and onions are translucent.
Drain any excess fat from the skillet.
Add the uncooked rice, broth, salt, pepper, and oregano to the skillet, stirring to combine.
Bring the mixture to a simmer, cover, and cook for 15 minutes.
Remove from heat, stir in the sour cream and half of the shredded cheddar cheese.
Transfer the mixture to a greased casserole dish and top with the remaining cheddar cheese.
Bake for 15-20 minutes or until the cheese is melted and bubbling.
Let the casserole rest for 5 minutes before serving.
