Ingredients

1 pound halal-certified smoked chicken sausage, sliced
1 tablespoon olive oil
1 large onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 tablespoon Cajun seasoning
1/2 teaspoon smoked paprika
Salt and black pepper to taste
2 green onions, sliced for garnish


Instructions

Heat the olive oil in a large skillet over medium-high heat.

In the same skillet, sauté the onion and bell pepper until softened.

Simmer for 20 minutes or until the liquid is absorbed and the rice is tender.
