Description
These creative, crispy roasted potatoes feature hand-carved facial features that wrinkle and shrink during the cooking process, resulting in delightfully eerie vegetable sculptures. Paired with a vibrant, tangy avocado and soured cream dip, this dish balances a satisfying starch crunch with a velvety, zesty cooling sauce. Perfect for themed gatherings, this plant-forward snack transforms simple root vegetables into a memorable, interactive centerpiece that is both wholesome and festive.
Ingredients
8 medium russet potatoes
3 tablespoons olive oil
1 teaspoon sea salt
0.5 teaspoon black pepper
2 ripe avocados
0.5 cup sour cream
1 clove garlic, minced
1 tablespoon lime juice
1 tablespoon fresh cilantro, chopped
Instructions
Preheat your oven to 400°F (200°C).
Peel the potatoes and use a small paring knife to carve eyes, noses, and mouths into each potato.
Place potatoes on a baking sheet, brush generously with olive oil, and season with salt and pepper.
Roast for 45 minutes until the potatoes are tender and have shrunken slightly to define their carved features.
While potatoes roast, mash the avocados in a bowl until smooth.
Stir in the sour cream, minced garlic, lime juice, and cilantro until the mixture is vibrant green and creamy.
Serve the warm potato heads alongside the cool slime dip.
Notes
Ensure the potatoes are firm for easier carving. For deeper wrinkles, you can par-boil them for 5 minutes before carving and roasting. Store leftover dip in an airtight container with plastic wrap pressed directly against the surface to prevent oxidation.
