Ingredients
2 large boneless skinless chicken breasts
1 medium zucchini, sliced into rounds
1 pint cherry tomatoes
1 medium red onion, quartered
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon smoked paprika
Salt and black pepper to taste
¼ cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Instructions
Preheat oven to 400°F (200°C)
Season chicken breasts with salt and pepper
Mix olive oil, garlic, oregano, basil, smoked paprika, and remaining salt/pepper
Toss zucchini, cherry tomatoes, and red onion in seasoning
Arrange chicken and veggie mixture in a single layer on a 9×13-inch baking dish
Sprinkle Parmesan and mozzarella over the vegetables
Roast for 35 minutes until chicken reaches 165°F
Taste and adjust seasoning if needed before serving

For extra flavor, marinate chicken for 20 minutes before roasting
