Ingredients
2 medium sweet potatoes, peeled and cut into 1.25 cm rounds
2 tbsp extra virgin olive oil
½ tsp fine sea salt
¼ tsp freshly cracked black pepper
115 g crumbled feta cheese
2 tbsp honey (preferably wildflower or orange blossom)
1 tbsp balsamic glaze
1 tsp fresh thyme leaves
¼ cup chopped walnuts (English walnuts or pecans)
Instructions
Preheat oven to 220°C (425°F) and line a baking sheet with parchment paper.
Toss sweet potato rounds with olive oil, salt, and black pepper
Spread in a single layer on the prepared sheet and roast for 20-25 minutes until golden and crisp, flipping once halfway
Remove from oven and let cool slightly
Top each round with feta, a drizzle of honey, fresh thyme, and chopped walnuts
Finish with balsamic glaze just before serving

Balsamic glaze is optional but recommended for visual elegance
