Ingredients
1 1/2 cups all-purpose flour
1/2 cup vegan butter, softened
1/3 cup brown sugar
1 tablespoon ground flaxseed meal mixed with 3 tablespoons water
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup finely diced apples
2 tablespoons maple syrup
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a small pan, simmer diced apples with maple syrup and a pinch of cinnamon until soft and caramelized; set aside to cool.
In a large bowl, cream together the softened vegan butter and brown sugar until smooth.
Add the prepared flax mixture and vanilla extract to the butter mixture, blending well.
Fold in the flour, cinnamon, and nutmeg to form a stiff dough.
Scoop dough into balls and place on the baking sheet, using your thumb to create an indentation in the center of each.
