Ingredients
3 cups shredded rotisserie chicken
16 corn tortillas
2 cups red enchilada sauce
2 cups shredded cheddar cheese
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 cup chopped fresh cilantro
2 tablespoons vegetable oil for light brushing
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, toss the shredded chicken with the ground cumin and chili powder.
