Ingredients
1.5 lbs boneless, skinless chicken thighs
3 tbsp white miso paste
2 tbsp unsalted butter, softened
1 tbsp brown sugar
1 tsp soy sauce
1/2 tsp ginger, minced
Optional: chopped green onions for garnish
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together the white miso paste, softened butter, brown sugar, soy sauce, and minced ginger until smooth.
Pat the chicken thighs dry with paper towels and place them into a mixing bowl.
Pour the miso glaze over the chicken and toss until each piece is thoroughly and evenly coated.
Arrange the chicken on the prepared baking sheet in a single layer.
Roast in the preheated oven for 25 minutes, or until the chicken is cooked through and the glaze is golden brown and caramelized.
Remove from the oven, let rest for 5 minutes, and garnish with green onions if desired.
Notes
Ensure chicken is patted dry to help the glaze adhere properly. If the top colors too quickly, tent loosely with foil for the last few minutes. Store leftovers in an airtight container in the refrigerator for up to 3 days.
