In a large bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the maple syrup, egg, and vanilla extract until fully incorporated.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Cover the dough and chill in the refrigerator for at least 30 minutes to ensure easy handling.
Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
Roll the chilled dough into small balls and coat them in the extra granulated sugar.
