Ingredients
4 boneless, skinless chicken breasts
1/3 cup fresh lime juice
1/4 cup soy sauce (use low sodium if preferred)
3 tablespoons honey
3 cloves garlic, minced
1/4 cup fresh cilantro, finely chopped
1/2 red bell pepper, finely minced
2 tablespoons olive oil
Salt and black pepper to taste
Instructions
In a medium bowl, whisk together the lime juice, soy sauce, honey, minced garlic, cilantro, minced red bell pepper, and olive oil.
Place the chicken breasts in a shallow dish or resealable plastic bag and pour the marinade over them.
Ensure the chicken is well-coated, seal, and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
Preheat your grill to medium-high heat and lightly oil the grates.
Remove chicken from the marinade, shaking off excess, and season lightly with salt and pepper.
Grill chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F and the exterior is nicely charred.
