Ingredients

8 oz yakisoba noodles or fresh wheat noodles
1 cup green cabbage, shredded
1/2 cup carrots, julienned
1/2 small onion, thinly sliced
2 stalks green onions, chopped
2 tbsp vegetable oil
3 tbsp Worcestershire sauce (non-alcoholic version)
1 tbsp oyster sauce (vegetarian or halal-certified)
1 tbsp ketchup
1 tsp soy sauce


Instructions

Whisk together the Worcestershire sauce, oyster sauce, ketchup, and soy sauce in a small bowl and set aside.
Heat oil in a large wok or skillet over high heat.
Add the onions, carrots, and cabbage, stir-frying for 3-4 minutes until crisp-tender.
Add the yakisoba noodles to the pan and stir-fry for 2 minutes to warm through.
Pour the prepared sauce mixture over the noodles and vegetables, tossing constantly to ensure even coating.
Remove from heat, garnish with green onions, and serve immediately.

Notes

Ensure your skillet is very hot before adding ingredients to achieve a proper stir-fry texture without sogginess. If the noodles are clumped, rinse them quickly in warm water before adding to the pan. You can add grilled chicken or firm tofu for extra protein.
