Description

Ingredients

1.5 lbs chicken breasts, diced
3 tablespoons honey
3 tablespoons fresh lime juice
2 cloves garlic, minced
2 cups cooked jasmine rice
1 ripe avocado, sliced
1/2 cup sweet corn kernels
1/2 cup cherry tomatoes, halved
2 tablespoons olive oil
Salt and black pepper to taste
Fresh cilantro for garnish


Instructions

In a small bowl, whisk together the honey, lime juice, and minced garlic to create the glaze.
Season the diced chicken with salt and pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and cook until browned and cooked through, about 6-8 minutes.
Pour the honey-lime glaze over the chicken and cook for another 2-3 minutes until the sauce thickens and glazes the chicken.
Divide the cooked rice into four bowls.
Top each bowl with the glazed chicken, avocado slices, corn, and cherry tomatoes.
Garnish with fresh cilantro before serving.

Notes

You can use cauliflower rice for a lower-carb option. The chicken can be marinated in the glaze for up to 30 minutes for even deeper flavor if time permits.
