Ingredients
1 lb ground beef (lean)
4 large russet potatoes, thinly sliced
1 large onion, diced
2 cups cheddar cheese, shredded
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon olive oil
Instructions
Preheat your oven to 375°F (190°C).
In a skillet over medium-high heat, brown the ground beef with the diced onions until fully cooked; drain excess fat.
Season the beef mixture with salt, pepper, and garlic powder.
In a greased 9×13 inch casserole dish, layer half of the sliced potatoes on the bottom.
Spread the browned ground beef mixture evenly over the potato layer.
Top with the remaining sliced potatoes.
Cover tightly with aluminum foil and bake for 40 minutes.
Remove the foil, sprinkle the shredded cheese over the top, and bake uncovered for another 10 minutes until potatoes are fork-tender and cheese is bubbling and golden.
Notes
Ensure potatoes are sliced thinly and uniformly (about 1/8 inch) so they cook through evenly. You can add vegetable broth for extra moisture if desired. Store leftovers in an airtight container for up to 3 days.
