Ingredients
4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup cocoa powder
2 1/4 tsp instant yeast
1 tsp salt
1 cup warm whole milk
1/4 cup unsalted butter, melted
1 egg, room temperature
1 tsp red gel food coloring
1 tsp vanilla extract
1/2 cup unsalted butter, softened (for filling)
1 cup brown sugar
2 tbsp ground cinnamon
1/2 cup semi-sweet chocolate chips
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
1.5 cups powdered sugar
1 tsp vanilla extract
Instructions
In a large bowl, whisk together flour, sugar, cocoa powder, yeast, and salt.
Add warm milk, melted butter, egg, food coloring, and vanilla; mix until a dough forms.
Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
Place dough in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled in size.
Roll the dough out into a 12×18 inch rectangle on a floured surface.
Spread the softened butter over the dough and sprinkle evenly with brown sugar, cinnamon, and chocolate chips.
Roll the dough tightly into a log and cut into 12 even rolls using dental floss or a sharp knife.
Place rolls in a greased 9×13 inch baking pan, cover, and let rise for another 45 minutes.
Preheat your oven to 350°F (175°C).
Bake for 20-25 minutes until the rolls are set and lightly browned.
Whisk together cream cheese, butter, powdered sugar, and vanilla until smooth.
Spread the glaze over the rolls while they are still slightly warm and serve immediately.
Notes
Ensure the milk is warm (about 110°F) but not hot to avoid killing the yeast. Use gel food coloring for the most vibrant red color without thinning the dough. You can prepare the dough up to the rolling stage and refrigerate overnight for a faster morning bake.
