Ingredients
4 boneless, skinless chicken breasts
1/3 cup extra-virgin olive oil
1/4 cup fresh lemon juice
3 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
3/4 cup crumbled feta cheese
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
Place the chicken breasts in a baking dish and pour the marinade over them, ensuring each piece is well coated.
Let the chicken marinate for at least 15 minutes or up to several hours in the refrigerator.
Bake the chicken in the preheated oven for 35 to 40 minutes, or until the chicken reaches an internal temperature of 165°F.
Remove the dish from the oven, sprinkle the crumbled feta cheese evenly over the top of the chicken.
Return the dish to the oven for 5 minutes or until the feta is slightly softened and warm.
Notes
You can add halved cherry tomatoes or Kalamata olives to the pan before baking for extra Mediterranean flair. Serve alongside roasted potatoes or a fresh cucumber salad for a complete meal. Leftovers can be stored in an airtight container for up to 3 days.
