Ingredients
2 lbs boneless skinless chicken thighs
1/4 cup olive oil
3 tbsp lemon juice
1 tbsp lemon zest
2 tbsp honey Dijon mustard
4 cloves garlic, minced
2 tsp dried oregano
1 tsp ground cumin
1 tsp smoked paprika
Salt and black pepper to taste
6-8 pita breads
1 cup tzatziki sauce
1 small red onion, thinly sliced
1 cup cherry tomatoes, halved
Instructions
In a large bowl, whisk together olive oil, lemon juice, zest, Dijon, garlic, oregano, cumin, paprika, salt, and pepper.
Add chicken thighs to the marinade, coating thoroughly, and refrigerate for at least 2 hours or overnight.
Preheat oven to 400°F (200°C).
Thread the marinated chicken thighs tightly onto a vertical skewer or stack them in a loaf-like shape on a parchment-lined baking sheet.
Roast for 90 minutes, or until the chicken is cooked through and the outer edges are deeply browned and crispy.
Remove from the oven and let the meat rest for 10 minutes before thinly slicing against the grain.
Serve the sliced chicken inside warm pita bread topped with tzatziki, red onion, and cherry tomatoes.
Notes
