Ingredients

1.5 lbs boneless skinless chicken breasts, cubed
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
2 teaspoons dried oregano
2 cloves garlic, minced
2 cups cooked quinoa or fluffy white rice
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/2 cup kalamata olives, pitted
1/2 cup feta cheese, crumbled
1/2 cup tzatziki sauce
Fresh parsley for garnish


Instructions

Whisk olive oil, lemon juice, dried oregano, and minced garlic in a bowl to create the marinade.
Add chicken cubes to the marinade and let sit for 10 minutes.
Heat a large skillet over medium-high heat and cook chicken until golden brown and cooked through, about 6-8 minutes.
While chicken cooks, assemble the base by portioning cooked quinoa into four bowls.
