Description
A rustic and savory Italian-American classic that balances golden-seared chicken thighs with the tangy heat of pickled cherry peppers and robust herb-infused chicken sausage. This one-pan meal creates a rich, complex sauce that is perfect for dipping with crusty bread. It is an ideal dish for home cooks looking for a restaurant-quality meal that is both comforting and deeply flavorful.
Ingredients
2 lbs chicken thighs, bone-in and skin-on
1 lb halal chicken sausage, sliced into rounds
1 cup pickled cherry peppers, sliced
3 tbsp cherry pepper brine
4 cloves garlic, minced
1 tsp dried oregano
1/2 cup chicken stock
2 tbsp olive oil
Fresh parsley, for garnish
Kosher salt and black pepper to taste
Instructions
Pat chicken thighs dry and season liberally with salt and pepper.
Heat olive oil in a large skillet over medium-high heat and sear chicken skin-side down until golden brown, then flip and brown the other side. Remove and set aside.
In the same skillet, add the sliced chicken sausage and sauté until browned.
Add minced garlic and oregano to the pan, cooking until fragrant.
Deglaze the pan with chicken stock and cherry pepper brine, scraping up the browned bits from the bottom.
Return chicken to the skillet, add the pickled peppers, and reduce heat to a simmer.
Cover and cook for 20-25 minutes until the chicken is fully cooked through.
Remove lid and simmer for an additional 5 minutes to thicken the sauce.
Garnish with fresh parsley before serving.
Notes
Ensure you are using halal-certified chicken sausage to maintain the integrity of the dietary requirements. The brined peppers are essential for the signature ‘sweet and sour’ flavor profile of this dish. Serve with crusty sourdough or ciabatta bread to soak up the pan sauce.
