Ingredients

2 lbs beef chuck, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 can (15 oz) tomato sauce
2 cups beef broth (halal certified)
2 medium potatoes, peeled and cubed
2 large carrots, sliced into rounds
1/2 cup pimento-stuffed green olives
1 tbsp capers
1 tsp ground cumin
1 tsp dried oregano
Salt and black pepper to taste


Instructions

Season the beef cubes with salt and pepper.
Heat olive oil in a large heavy-bottomed pot over medium-high heat and sear the beef in batches until browned on all sides; remove and set aside.
In the same pot, sauté the onion and green bell pepper until softened.
Add the minced garlic, cumin, and oregano, cooking for one minute until fragrant.
Return the beef to the pot and pour in the tomato sauce and beef broth.
Bring to a boil, then reduce heat to low, cover, and simmer for 50 minutes.
Add the potatoes, carrots, olives, and capers to the pot.
Continue simmering for an additional 20 minutes or until the vegetables and meat are fork-tender.
Adjust seasoning if necessary and serve warm.
