Description

Ingredients

Fresh arugula – 6 cups
Ripe peaches – 4 large (pitted and sliced)
Goat cheese – 1/2 cup (crumbled)
Toasted pecans – 1/4 cup
Red onion – 1/4 cup (thinly sliced)
Extra-virgin olive oil – 2 tablespoons
Aged balsamic vinegar – 1 tablespoon
Dijon mustard – 1 teaspoon
Honey – 1 tablespoon
Sea salt – to taste
Fresh thyme – 1 teaspoon (optional garnish)


Instructions

Wash arugula and pat dry
Thinly slice red onion and soak in cold water for 5 minutes, then drain
Slice peaches and remove pits
Toast pecans in a dry skillet over medium heat until fragrant
