Ingredients
1 lb smoked beef or chicken kielbasa, sliced into rounds
1 lb baby potatoes, halved
1 cup baby carrots

1/3 cup honey
1/4 cup soy sauce
3 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the honey, soy sauce, minced garlic, and black pepper to create the glaze.
Place the sliced kielbasa, potatoes, carrots, and bell peppers on a large rimmed baking sheet.
Drizzle with olive oil and half of the honey-garlic glaze, then toss until evenly coated.
Spread the mixture in a single layer to ensure even roasting.
Bake for 20 minutes.
Remove from the oven, brush the remaining glaze over the ingredients, and toss gently.
