1 Teaspoon Unsalted Butter
4 Sliced Fresh Tomatoes
2 Large Fresh Eggs
1/4 Cup Shredded Cheddar Cheese


Instructions

Heat skillet over medium heat, add butter, and sauté tomatoes until softened and slightly caramelized.
Create a well in the tomato slices and crack eggs into the center. Season with salt and pepper.
Place flour wrap over the eggs, pressing gently to create contact. Cook until the eggs are set and the tortilla is golden.
Top with cheese and let melt slightly. Fold the wrap in half to encase the filling.
Slide onto a plate and serve warm.
