Ingredients
1.5 lbs chicken breast, cut into 1-inch cubes
3 tbsp olive oil
2 tbsp lemon juice
1 tbsp honey
1 tsp dried oregano
1 tsp garlic powder
2 cups basmati rice
4 cups water
1 cucumber, diced
2 cups cherry tomatoes, halved
1/2 cup red onion, finely diced
1/2 cup crumbled feta cheese
1 cup plain Greek yogurt
1 garlic clove, minced
1 tsp fresh dill, chopped
Salt and pepper to taste
Instructions
Whisk olive oil, lemon juice, honey, oregano, garlic powder, salt, and pepper in a bowl, then stir in the chicken cubes and marinate for 20 minutes.
Prepare the basmati rice by simmering in water until tender, then fluff with a fork.
