Description

This comforting and hearty casserole is the ultimate weeknight solution. Featuring al dente rotini pasta, savory ground beef, and sweet corn kernels, it is all enveloped in a velvety, ranch-infused cheddar cheese sauce. Baked to bubbly perfection, this dish offers a golden, cheesy crust and a complex, herbaceous flavor profile that will satisfy the whole family. It is a reliable, one-dish meal that balances protein, vegetables, and comfort perfectly.

Ingredients

1 lb ground beef
12 oz rotini pasta
1 cup sweet corn kernels
2 tbsp ranch seasoning mix
4 oz cream cheese, softened
1/2 cup sour cream
1/2 cup milk
2 cups shredded sharp cheddar cheese
Salt and pepper to taste
1 tbsp chopped fresh parsley for garnish

Instructions

Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
Cook the rotini pasta according to package directions until al dente, then drain.
In a large skillet, brown the ground beef over medium heat until fully cooked; season with salt and pepper.
In a large bowl, whisk together the cream cheese, sour cream, milk, and ranch seasoning until smooth.
Add the cooked pasta, browned beef, and sweet corn to the sauce and toss to coat thoroughly.
Transfer the mixture to the prepared baking dish and sprinkle evenly with shredded cheddar cheese.
Bake for 30 minutes, or until the cheese is melted and bubbling with a slight golden crust.
Remove from the oven, garnish with fresh parsley, and serve warm.

Notes

You can prepare this casserole ahead of time and keep it refrigerated until ready to bake. To substitute fresh corn, canned or thawed frozen sweet corn works perfectly. For a zestier flavor, add a pinch of smoked paprika to the meat while it browns.
