Description

Tender marinated chicken breasts meet crisp Mediterranean vegetables in a zesty, protein-packed bowl. Grilled to perfection with a spicy-sweet marinade, served over cooling hummus and a refreshing cucumber-tomato salad for a clean-eating meal.


Ingredients

2 large chicken breasts
3 tablespoons olive oil
2 cloves garlic, freshly minced
2 tablespoons lemon juice
1 tablespoon honey
1 teaspoon chili flakes
1 tablespoon tomato paste
8 ounces cucumbers, diced
1 cup cherry tomatoes, halved
3 tablespoons tahini-based hummus
Salt, to taste
Fresh herbs (optional, for garnish)


Instructions

Whisk olive oil, garlic, lemon juice, honey, chili flakes, and tomato paste in a bowl to create marinade.
Submerge chicken breasts in marinade for 30 minutes, refrigerated.
Heat grill to medium-high. Cook chicken 6-7 minutes per side until charred and cooked through.
Meanwhile, combine cucumbers, cherry tomatoes, and 1 tablespoon olive oil with salt in a bowl.
To serve, layer hummus in bowls, top with warm chicken, then cucumber salad. Garnish with herbs if desired.
