Ingredients
Chicken Breasts, 2 large pieces
Lemon Juice, 2 tablespoons
Honey, 1 tablespoon
Tomato Paste, 1 tablespoon
Chili Flakes, 1 teaspoon
Extra Virgin Olive Oil, 2 tablespoons (divided)
Garlic, 2 cloves (minced)
Cherry Tomatoes, 1 cup (halved)
Cucumber, 1 medium (diced)
Kale Leaves, 2 cups
Chickpeas, 1 cup (canned, drained)
Tahini, 2 tablespoons
Smoked Paprika, 1/2 teaspoon
Sea Salt, 1/2 teaspoon
Black Pepper, 1/4 teaspoon
Parsley, 1/4 cup (chopped for garnish)
Instructions
Preheat grill to medium-high heat (375-400°F)
Combine lemon juice, honey, tomato paste, chili flakes, 1 tablespoon olive oil, and garlic in bowl; mix marinade
Submerge chicken breasts in marinade, cover, refrigerate 15-30 minutes
Remove chicken from marinade (reserve remainder for basting), let sit at room temperature 10 minutes
Grill chicken 5-7 minutes per side until charred with thermometer at 165°F
Let rest 5 minutes on medial artery
In small bowl, whip chickpeas with tahini, smoked paprika, 1 tablespoon olive oil, salt, pepper
Toss cucumber, cherry tomatoes, and remaining marinade with 1/2 cup olive oil
Divide hummus base into 2 bowls, top with chicken, salad, and parsley
Notes
Marinate up to 30 minutes maximum
Chicken thighs substitute for more juiciness
Adjust chili flakes for heat level
Store leftover hummus in airtight container 3 days
