Ingredients
8 large orange bell peppers
1 lb lean ground turkey
2 cups cooked basmati rice
1 cup tomato sauce
1 small onion, finely diced
2 cloves garlic, minced
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
Instructions
Preheat your oven to 375°F (190°C).
Cut the tops off the orange peppers and remove the seeds and membranes.
Carefully carve triangle eyes and a jagged mouth into the side of each pepper using a small paring knife.
Heat olive oil in a skillet over medium heat and sauté the onion and garlic until soft.
Add ground turkey to the skillet and cook until browned and fully cooked through.
Stir in the cooked rice, tomato sauce, oregano, salt, and pepper until well combined.
Stuff each carved pepper with the turkey and rice mixture.
Place the peppers upright in a baking dish and cover with foil.
Bake for 20 to 25 minutes until the peppers are tender.
Remove the foil for the last 5 minutes of baking if you prefer softer peppers.
Notes
Ensure you carve the faces carefully to prevent the peppers from tearing. If the peppers do not stand upright, trim a tiny sliver off the bottom to level them. You can add shredded mozzarella or cheddar cheese to the filling for a creamier texture.
