Description

These vibrant, health-conscious kabobs combine tender marinated chicken with fresh bell peppers and onions. The honey-mustard glaze balances sweetness and tang, while grilling adds smoky char. Perfect for outdoor meals or easy meal prep.

Ingredients

Scale

2 lbs Chicken Breast (cut into 1-inch cubes)
3 Medium Bell Peppers (bite-sized cubes)
1 Medium Red Onion (halved, thinly sliced)
1/3 Cup Yellow Mustard
1/4 Cup Pure Honey
2 Tablespoons Olive Oil
1 Teaspoon Garlic Powder
1 Teaspoon Ground Paprika
1/2 Teaspoon Ground Black Pepper
1 Teaspoon Salt
1 Tablespoon Lemon Juice (optional for glaze)

Instructions

Preheat grill to 400°F (205°C)
Whisk mustard, honey, oil, garlic powder, paprika, black pepper, salt, and lemon juice in a bowl
Add bell peppers and onions to the marinade, toss briefly to coat
Marinate chicken for 30-45 minutes in the refrigerator
Thread chicken and vegetables onto greased skewers, alternating for even cooking
Grill for 10-12 minutes, turning until golden and slightly charred on all sides

Notes

Marinate up to 4 hours for enhanced flavor
Use thighs instead of breasts for richer taste
Reduce honey to 3 tbsp for less sweetness
Ensure skewers are pre-greased to prevent sticking
