Description
Tender citrus-marinated chicken with a sweet-spicy glaze, topped with fresh mango salsa. A high-protein, vibrant dish perfect for summer gatherings or quick weeknight meals.
Ingredients
4 boneless chicken breasts
3 tbsp honey
3 tbsp fresh lime juice
1 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
1 large mango, diced
1/2 red onion, finely chopped
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
1 tbsp lime juice (for salsa)
Instructions
Combine honey, lime juice, olive oil, cumin, paprika, salt, and pepper in a bowl for the marinade.
Place chicken in a resealable bag, pour marinade over it, and refrigerate for at least 1 hour.
Grill, bake at 400°F (200°C), or pan-sear chicken until cooked through (15–18 minutes).
In a separate bowl, mix mango, red onion, jalapeño, cilantro, and lime juice for the salsa.
Serve chicken warm, topped with salsa.
Notes
Marinate chicken up to 24 hours for deeper flavor.
Salsa can be prepared in advance and refrigerated for up to 2 days.
For a smokier taste, use a grill pan for searing.
