Ingredients
4 boneless chicken breasts (1 ½ lbs)
½ cup honey
¼ cup fresh lime juice
1 tsp salt
½ tsp black pepper
2 cloves garlic, minced
1 tbsp olive oil
2 cups cooked brown rice (or quinoa)
1 ripe avocado, sliced
1 cup halved cherry tomatoes
½ cup corn kernels (fresh or canned, drained)
¼ cup chopped fresh cilantro
Instructions
Whisk honey, lime juice, garlic, salt, and pepper in a bowl. Add chicken, marinade for 15–30 minutes.
Heat olive oil in a skillet over medium-high heat. Cook chicken 5–6 minutes per side until golden and juices run clear.
Simmer 2 tbsp marinade in skillet until thickened (1–2 minutes), then brush over cooked chicken.
Divide cooked rice into 4 bowls. Top with chicken, avocado, cherry tomatoes, corn, and cilantro. Serves immediately or refrigerates components separately up to 3 days.

Substitute quinoa for rice if desired.
