4 boneless skinless chicken breasts
2 large sweet potatoes, peeled and cubed (1-inch pieces)
1 pound fresh green beans, trimmed
1/3 cup natural honey
1/4 cup low-sodium soy sauce
3 cloves minced garlic
1 teaspoon dried thyme
Salt and pepper to taste
Olive oil for sheet pan


Instructions

Preheat oven to 400°F (200°C). Pat chicken dry and season with salt and pepper. Whisk honey, soy sauce, garlic, thyme, and a pinch of salt into glaze. Arrange sweet potato cubes on sheet pan and drizzle with olive oil. Roast for 15 minutes. Add green beans and chicken to pan, brush chicken with half the glaze. Roast 25 more minutes. Spoon remaining glaze over sweet potatoes and roast 5 minutes until chicken is cooked through (internal temp 165°F).

Notes

Chicken thighs enhance moisture; use frozen green beans if fresh is unavailable. Use parchment paper for easiest cleanup. Check chicken temperature with an instant-read thermometer.
