Ingredients

4 boneless skinless chicken thighs
2 cups jasmine rice
1 red bell pepper, chopped
1 large onion, sliced
3 garlic cloves, minced
3/4 cup BBQ sauce (low-sodium)
1/4 cup honey, pure
1 tsp smoked paprika
1.5 cups low-sodium chicken broth
1 tbsp soy sauce (alcohol-free)
1 tbsp olive oil
Salt to taste, non-alcoholic


Instructions

Heat oil in a large skillet over medium-high. Sear chicken thighs 4-5 minutes per side
Add onion, bell pepper, and garlic; cook 3-4 minutes
Stir in rice and toasted paprika
Pour in chicken broth, soy sauce, and BBQ sauce
Bring to boil, reduce heat, cover and simmer 15 minutes
Stir in honey and cook uncovered 8-10 minutes until liquid absorbs
Fluff rice and serve warm

Notes

Use tamari instead of soy sauce for soy-free
Substitute zucchini or broccoli for variety
Rice works best if refrigerated leftovers are reheated in oven (175°F) 20-25 minutes
