Ingredients
1.5 lbs ground beef
1 large onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon dried thyme
4-5 medium potatoes (about 2 lbs), peeled and thinly sliced
1 cup shredded cheddar cheese (or your favorite melting cheese)
Optional: 1/4 cup milk or cream for a richer potato layer
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium-high heat, brown the ground beef with the chopped onion until no pink remains. Drain off excess fat.
Stir in the minced garlic, salt, pepper, paprika, and thyme. Cook for 1 minute more until fragrant. Remove from heat.
Arrange half of the thinly sliced potatoes in the bottom of a 9×13 inch baking dish.
Spread the seasoned ground beef mixture evenly over the potato layer.
Top the beef with the remaining sliced potatoes. If using, you can drizzle milk or cream over the potatoes for extra richness.
Cover the baking dish tightly with aluminum foil.
Bake for 30 minutes.
Remove the foil and sprinkle the shredded cheese evenly over the top.
Bake for another 15-20 minutes, or until the cheese is melted and bubbly, and the potatoes are tender when pierced with a fork.
Let the casserole rest for 5-10 minutes before serving.
Notes
For easier slicing of potatoes, use a mandoline slicer if available, but be cautious. You can also par-boil the potato slices for about 5 minutes before layering to ensure they are very tender. Feel free to add other seasonings like onion powder or a pinch of cayenne for a little heat. This casserole is best served hot directly from the oven.
