Ingredients
1.5 lbs lean ground turkey
1 small yellow onion, finely diced
2 cloves garlic, minced
4 cups fresh baby spinach
2 cups shredded sharp cheddar cheese
1/2 cup Greek yogurt (plain)
2 tbsp tomato paste
1 tsp mustard
1/2 tsp smoked paprika
Salt and pepper to taste
1 tbsp olive oil
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium-high heat and add the onion, cooking until translucent.
Add the ground turkey to the skillet, breaking it up with a spoon, and cook until browned and caramelized.
Stir in the garlic, tomato paste, mustard, and paprika, cooking for 1-2 minutes until fragrant.
Fold in the baby spinach and cook until just wilted, then remove from heat.
Stir in 1 cup of the shredded cheddar and the Greek yogurt until creamy and well-combined.
Transfer the mixture to a baking dish and spread evenly.
Top with the remaining cup of cheddar cheese.
Bake for 15-20 minutes, or until the cheese is melted and bubbling.
Let sit for 5 minutes before serving.
Notes
