Ingredients

1 lb lean ground beef or ground turkey
2 cups cooked white or brown rice
1 packet taco seasoning
1 cup black beans, drained and rinsed
1 cup frozen corn, thawed
1 cup shredded cheddar cheese
2 cups fresh shredded lettuce
1/2 cup fresh salsa
1/4 cup diced red onion
1/4 cup chopped fresh cilantro


Instructions

Place the ground beef or turkey in a large skillet over medium-high heat and cook until browned, breaking it apart with a spoon.
Drain any excess fat from the skillet.
Add the taco seasoning and a splash of water as directed on the packet, stirring until well combined.
Reduce the heat and stir in the beans and corn, cooking for an additional 2-3 minutes until heated through.
