Ingredients

2 large sweet potatoes, peeled and cubed
1 can (15 oz) chickpeas, drained and rinsed
1 tablespoon coconut oil
1 large onion, finely diced
3 cloves garlic, minced

2 tablespoons curry powder
1 teaspoon ground turmeric
1 can (14 oz) full-fat coconut milk
1/2 cup vegetable broth
1 tablespoon lime juice
Salt and pepper to taste
Fresh cilantro for garnish


Instructions

Heat coconut oil in a large pot over medium heat.
Add diced onion and sauté until translucent, about 5 minutes.
Stir in garlic, ginger, curry powder, and turmeric; cook for 1 minute until fragrant.
Add cubed sweet potatoes and stir to coat in the spice mixture.
Pour in the coconut milk and vegetable broth, bringing the mixture to a gentle boil.
Reduce heat, cover, and simmer for 20 minutes until potatoes are tender.
Stir in the chickpeas and cook for another 5 minutes to heat through.
