Ingredients
1.5 lbs chicken breasts, diced
1 tbsp olive oil
1 tsp chili powder
1 tsp smoked paprika
1/2 tsp cumin
2 cups fresh or frozen corn kernels
1/2 cup Greek yogurt
1 lime, juiced
1/4 cup fresh cilantro, chopped
1/4 cup crumbled cotija or feta cheese
4 cups cooked brown rice or quinoa

Instructions
In a bowl, toss the diced chicken with chili powder, smoked paprika, cumin, salt, and pepper until well coated.
Heat olive oil in a large skillet over medium-high heat.
